Once upon a time, martinis had a reputation for being a stiff, polished drink that the likes of James Bond would sip. But the cocktail has come a long way.
True, you can still order it shaken (not stirred) with a lemon twist, à la 007. Or, you could ask for a classic dirty martini. But here and now, martinis now come in more renditions than Levi’s. Dolly Parton’s Dirt Road Martini, for one, is spiked with tea and giardiniera. Allrecipes members have also shared creative twists, like pumpkin spice and dill pickle martinis. Of course, we can’t forget the buzzy espresso martini that experienced a renaissance a few years back.

Regardless of the remix, we rarely think of martinis as being a super summery cocktail, as they tend to be higher in alcohol and richer in flavor than most folks would prefer to sip when the sun is out in full force. The latest martini of the moment, though, is lighter, brighter, and a serious contender for the 2025 Drink of the Summer.
What is the Sauvy B Martini?
This cocktail was initially introduced to us by Hillstone, a chain restaurant with 38 locations scattered across the Southern and Eastern U.S., where its known as a Crisp Martini. In case you’re unfamiliar, Hillstone is renowned for its creamy spinach-artichoke dip, saucy French dip sandwich, and a triple-nut brownie that fans rave is “100/10.” The restaurant has some notable fans, including celebrity chefs like David Chang and Samin Nosrat.
Even if you don’t have a Hillstone near you, you might want to try the chain’s buzzy beverage. While it's listed as a martini, it's not technically a martini at all; it is, however, served in a martini glass. Traditional martinis are made with gin or vodka, and served with olives and lemon. You can ask for your martini dry (3:1 spirit to vermouth) or wet (with more vermouth than that), if you’d like.
This boundary-pushing, lightened-up twist is more like a mashup of a gin martini and 2023’s hit, the Hugo Cocktail, made with the elderflower liqueur St. Germain.
So what makes the Sauvy B Martini crisp? Similar to other summer sippers, including Sprite Lemon Tea and the Chilton Cocktail, this martini remix features fresh lemon juice. Plus, after shaking, this easy mixed drink gets even more crispness from a splash of sauvignon blanc (hence its name). This white wine varietal tends to have “vibrant acidity,” and “crisp and refreshing” flavor, with notes of citrus, according to our friends at Food & Wine.
How to Make a Sauvy B Martini
Asking for just four ingredients and easy to mix, we can see why the Sauvy B Martini is making waves on social media. Creators on social media are now sharing a copycat recipe of their not-so-martini “martini” so we can all try it at home.
Versions vary slightly, but we’re sharing the formula from @trobsssss on TikTok, who says she snagged it from a former Hillstone bartender who used to shake up Crisp Martinis.

- 1 ounce St. Germain elderflower liqueur
