When they showed up on store shelves in 1963, Pop-Tarts came in four flavors: Strawberry, Blueberry, Brown Sugar Cinnamon, and Apple-Currant. None of them were frosted until 1967. The next year, the brand started adding sprinkles. Have you started to notice a theme? Ever since those early changes, Pop-Tarts has prided itself on innovation, even touting its evolution in a timeline on its site.

Still today, Pop-Tarts is adding creative new flavors—like Frosted Sugar Cookie and Girl Scout cookie-inspired Frosted Caramel Coconut and Frosted Thin Mint—new products like cereal, and new sizes and formats.

But it’s never had anything like what’s hitting the stores right now. And we can't wait for this to take its place on the timeline, just in time for summer.

Pop-Tarts New Ice Cream Lineup

Pop-Tarts is going where it’s never gone before…Into an entirely different section of the store. However, the concept may not be entirely novel. People have been known to take two Pop-Tarts, put ice cream between them, and create a DIY ice cream sandwich, and it’s a pretty brilliant dessert. Brilliant enough that there are now official Pop-Tarts Ice Cream Sandwiches—and pints—coming soon.

How fantastic is that?! And right before prime ice cream season. 

News of these innovations has been floating around social media for a few weeks now, and we can officially confirm that three varieties of Pop-Tarts Ice Cream Sandwiches and three varieties of Pop-Tarts Ice Cream pints are really happening. Not only are they happening; they’re headed to the freezer section of your local grocery store right now. 

Pop-Tarts New Ice Cream Pints

Pop-Tarts ice cream pints with flavor swirls and pastry-style pieces come in three flavors, all based on fan-favorite Pop-Tarts toaster pastry flavors:

  • Frosted Brown Sugar Cinnamon
  • Frosted Strawberry Ice Cream
  • Frosted S’Mores Ice Cream

Pop-Tarts New Ice Cream Sandwiches

Pop-Tarts also takes two of those ice cream flavors and turns them into ice cream sandwiches, plus adds another flavor to the mix:

  • Frosted Brown Sugar Cinnamon Sandwiches
  • Frosted Strawberry Ice Cream Sandwiches
  • Frosted Chocolate Fudge Ice Cream Sandwiches

The best part is that the "sandwich" of these ice cream treats is actual toaster pastries that correspond with the ice cream. If you choose the Frosted Strawberry Ice Cream Sandwiches, there will be two Frosted Strawberry Pop-Tarts holding the Frosted Strawberry Ice Cream in. 

When Instagram’s Markie Devo posted about these genius Pop-Tart creations, one of their followers summed up what we’ve been thinking since we heard about these treats: “Tbh I’m surprised it took them so long to do this Poptarts ice cream sandwiches are meant to be and many people (myself included) have been making our own for ages.”

And, if we’re going to be honest, we’ve never seen a social media post about a new product that got so many positive comments. Almost every commenter who wasn’t excited simply wanted some different flavors, such as Confetti Cupcake or a S’mores Ice Cream Sandwich. 

"We’re thrilled to turn an iconic toaster pastry into a cool, crave-worthy treat for a new aisle," said Frances Alvarez, SVP of Brand Management at Beanstalk, a global brand licensing agency that worked with Pop-Tart’s parent brand Kellanova on the products.

You should be, team Pop-Tarts, you should be. You may have just won the summer of 2025 before it even started.
