1/2 pound bacon, each slice cut in half crosswise

2 cans crescent roll dough

8 ounces Cheddar cheese, shredded

32 cornichon gherkins or other small pickles

1 large egg, beaten
Directions
Preheat the oven to 350 degrees F (180 degrees C). Line a baking sheet with parchment.
Heat a large skillet over medium heat and cook bacon until slightly crispy but still pliable, about 5 minutes. Drain and set aside.
Unroll crescent roll dough and split into triangles. Cut each triangle in half lengthwise to form 32 narrower triangles.
Place about 1 tablespoon cheese on bottom half of each dough triangle. Top with a slice of bacon. Lay 1 pickle horizontally on the bottom of the triangle and roll up; place seam side down on the prepared baking sheet.
Bake in the preheated oven until golden brown and toasted, about 12 minutes.
