Original recipe (1X) yields 4 servings

  • 2 tablespoons unsalted butter

  • 1 small onion, chopped

  • 1 stalk celery, sliced

  • 6 baby carrots, sliced

  • 4 ounces white mushrooms, sliced

  • 8 cups chicken broth

  • 2 cups shredded cooked rotisserie chicken

  • 1 (5.6 ounce) packet chicken flavor rice and pasta blend, such as Knorr® Rice Sides

Directions

  • Heat butter in a large stockpot over medium-high heat. Add onion, celery, carrots, and mushrooms. Cook until onions are translucent, about 4 minutes.


  • Add broth and chicken. Bring to a boil.


  • Add rice packet, reduce heat, and simmer 8 minutes. Turn heat off and let stand for 8 minutes. Ladle into bowls and serve.
