A hearty sandwich is a fantastic centerpiece for a casual feast and Chef John crafted the perfect recipe to make for Super Bowl LIX that celebrates both teams: Kansas City–Style “Burnt” Ends Philly Cheesesteaks.
What Are Burnt Ends Philly Cheesesteaks?

Chef John’s decadent sandwich features hoagie rolls loaded with Kansas City–style burnt ends and traditional Philly cheesesteak toppings. That includes gooey Cheez Whiz, sweet sautéed onions, spicy-tangy picked peppers, and mild sliced green onions. While the term burnt ends typically refers to the caramelized trimmings of smoked brisket or pork belly, Chef John’s shortcut version features beef chuck that’s roasted with your favorite Kansas City–style barbecue sauce.
How to Make Burnt Ends Philly Cheesesteaks?

Season the beef with your favorite barbecue dry rub and double wrap it in foil. Then roast it in a 325 degree F oven for two and a half hours. Let the meat rest for an hour, then cut it into 1-inch cubes and transfer them to a large mixing bowl with the cooking juices. Stir in the barbecue sauce and refrigerate everything overnight.
The next day, transfer the chuck cubes to a shallow baking dish and brush them with more barbecue sauce. Bake the meat in a 450 degree F oven for one hour, then brush them with more barbecue sauce. Reduce the oven temperature to 250 degrees F and bake the cubes until they’re as tender as you want (about 90 minutes). The finished product might look, well, burnt—but don’t be fooled by the appearance: The beef should be crispy and caramelized on the outside and tender on the inside.
Transfer the burnt ends onto four hoagie rolls and layer on Cheez Whiz, sautéed onions, pickled peppers, and sliced green onions.
Burnt Ends Philly Cheesesteak Tips and Variations
- Make them party-friendly. Halve the hoagie rolls to make individual-size sandwiches.
- Toast the bread. Chef John recommends brushing the rolls with rendered fat from the roasting pan, and toasting them in a 350 degree F oven for seven to 10 minutes.
- Add more homemade elements. Try Chef John’s easy barbecue sauce and all-purpose rub recipes.
- Swap out the meat. If you have a smoker and some extra time on your hands, make pork belly burnt ends for the sandwich instead. Or try hot dog burnt ends.
